VEG MANCHURIAN


Ingredients:(for veg balls)
Mixed vegetables(carrot, peas, cabbage) - 2 cups
Maida - 2 tsp
Red chilli powder - 1 tsp
Ajeenomotto - 1 tsp
Salt - as required
Soy sauce - 1 tsp
Chilli sauce - 1/2 tsp
Red color - optional

For sauce
Cumin seeds - 1/2 tsp
Spring onion - 1stick
Ginger(chopped) - 1 tsp 
Garlic(chopped) - 2 tsp
Soy sauce - 2 tbsp
Chilli sauce - 1 tsp
Tomato sauce - 2 tbsp
Sugar - 1/2 tsp
Salt to taste
Ajeenomotto - 1 tsp
Oil
Corn flour+water mixture - 2 to 3 tbsp

Method:
1. Boil the vegetables and drain it and try to take all the moisture out of it
2.Mash the vegetables and add all the ingredients (for veg balls) and mix it well
3. Make it into small balls and deep fry it in oil

For sauce:
1. Pour a little oil in a pan and add cumin seeds
2. Add onion, ginger, garlic and saute it in a low flame
3. Add all the sauces, salt, ajeenomotto, sugar and mix well and add a cup of water
4. When the mixture is boiling add the corn flour water mixture and allow it to boil until the sauce thickens
5. Switch off the flame and toss in the veg balls and garnish with coriander leaves


  • Be careful while adding the salt in both veg balls and the sauce
  • Soy sauce is very salty and remember that ajeenomotto is also a salt so the dish requires very very little amount of salt
  • Instead of using water in the sauce use the water that is drained from the vegetables. This gives a delicious sauce
  • Before dropping all the balls in the oil check it by dropping one ball and if the ball splits add some more maida to the mixture and mix it and fry it
This dish goes very well with pulao and fried rices

CHICKEN SATAY (Manchurian Style)




              While I was on a trip to India we went to this awesome restaurant in Chennai called SEA SHELLS. We had a mouth watering dish called chicken satay. It was mind blowing. I was trying to recreate this dish and googled for a while. But all i could find was chicken satay in malay or thai style. So i just created this dish on my own. It was not like the one we had in the restaurant but it was close.
 It tasted really good. 


Ingredients:
Chicken(boneless)
Ginger Garlic paste
Red chilli powder
Lemon Juice
Salt
Oil
For Sauce:
Onion
Capsicum
Ginger Garlic (crushed)
Red chilli powder
Soy sauce
Tomato chilli saucereen chilli sauce
Ajeenomotto
Vinegar
Corn flour
Salt
Oil

Preparation:
  1. Soak some wooden skewers in water 
  2. Add all the ingredients in the marinade section to the chicken and marinate for atleast 1 hr
  3. Before skewering the chicken pieces sprinkle some corn flour on the marinated chicken and skewer the pieces
  4. Grill the chicken in either charcoal grill or electric grill(i used electric grill)


Making the sauce:
  1. Add some oil in a pan
  2. Add the chopped ginger and garlic and saute well
  3. Add the onions and capsicum and add salt, ajeenomotto and chilli powder
  4. Add all the sauces and vinegar and add water and mix well
  5. Mix some corn flour in water and pour to the mixture to thicken the sauce
  6. Adding color is optional
Make the sauce first and then grill the chicken. After grilling brush some sauce over the chicken both the sides. While serving keep some extra sauce on the side.

Note: Cut the chicken into strips rather than cutting it into cubes. It looks good on the skewer

MUSHROOM MANCHURIAN

This recipe is exactly like cauliflower manchurian. Just add mushroom instead of cauliflower and follow the same recipe.

EGG&VEG NOODLES


Ingredients:
Noodles- 1packet
carrot- 1(shredded)
Capsicum- 1
Cabbage- 1cup
Onion- 1(big)
Egg- 3or4
Soy sauce- 2tsp
Chilli garlic sauce- 1tsp
Tomato ketchup- 1tsp
Ajinomotto
Salt
Pepper
Lemon juice

Preparation:


  1. Boil the noodles in water along with some salt and oil. When it is cooked for 85% drain it in a colander and pour chill water over it and keep it aside
  2.  Cut all the vegetables and onion into thin strips and use any vegetables of choice
  3. . Add oil in a pan and heat it. When it is really hot put all the vegetables and onion together in the oil. Stir fry the vegetables in a high heat.
  4. Add salt, ajinomotto, pepper and mix well
  5. Add all the sauces and mix well.
  6. Break all the eggs into a bowl and add little soya sayce and beat well
  7. Scramble the beaten eggs in a pan and mix it with the vegetables.Add the boilednoodles and mix well
  8. Garnish with spring onions or coriander leaves

CHILLI CHICKEN (INDO-CHINESE)

Ingredients:
Chicken(boneless)- 1kg
Salt
Pepper
One egg
Soy sauce
Corn flour - 2tbsp
Mix all the ingredients along with the chicken well and deep fry it in the oil and drain it and keep aside.

For the sauce:
Onion- 1(diced)
Capsicum- 1(diced)
Ginger and garlic(finely chopped)- 2tbsp
Soy sauce
Chilli sauce
Salt
Pepper
Ajinomotto
Sugar
Corn flour+water mixture

Preparation:

1. Add a little oil in a pan and heat it
2. Add broken red chillies and add ginger and garlic and saute well
3. Add onion and capsicum to it and cook it for a few min
4. Then add salt, pepper, ajinomotto, a pinch of sugar, chilli sauce and soy sauce and mix well
5. Then add a cup of water and allow it to a boil
6. Add the fried chicken and mix well until the chicken gets coated well
7. Add 2-3tsp of cornflour+water mixture and boil it until the sauce thickens and switch off
Add some spring onions on top and serve it with fried rice

GOBI MANCHURIAN




Ingredients:
Cauliflower - 1(whole)
Maida - 1cup
Corn flour - 1/2 cup
Soy sauce - 2 tsp
Salt - 1 tsp
Color - 1 pinch

For the sauce:
Onion - 1(medium)
Garlic - 3 (sliced)
Ginger - 1 inch(sliced)
Gr.chilli - 1(sliced)
Soy sauce - 1/4 cup
Red chilli sauce - 1 tbsp
Ajeenomotto - 1/2 tsp
Sugar - 1/2 tsp
Cumin seeds - 1/4 tsp
Salt
Pepper
Corn flour - 1 tsp
Oil

Preparation:
1. Cut the cauliflower into small florets and put it in hot water for five min and drain it
2. Mix maida, corn flour, soy sauce, salt and color along with water to make a smooth batter (It should not be too thick or too watery)
3. Dip the cauliflower into the batter and deep fry it in oil until it becomes crispy
4. Pour some oil in a pan and add the cumin seeds, ginger, garlic, onion one by one and saut'e it well
5. Add ajeenomotto, red chilli sauce, sugar and soy sauce
6. Mix the corn flour in some water and add it too
7. The mixture will become thick then switch off the flame and add the fried cauliflowers and mix well
8. Garnish it with green onions or cilantro
(Be careful in adding salt because soy sauce, chilli sauce and ajeenomotto contains salt)
