CHICKEN SATAY (Manchurian Style)




              While I was on a trip to India we went to this awesome restaurant in Chennai called SEA SHELLS. We had a mouth watering dish called chicken satay. It was mind blowing. I was trying to recreate this dish and googled for a while. But all i could find was chicken satay in malay or thai style. So i just created this dish on my own. It was not like the one we had in the restaurant but it was close.
 It tasted really good. 


Ingredients:
Chicken(boneless)
Ginger Garlic paste
Red chilli powder
Lemon Juice
Salt
Oil
For Sauce:
Onion
Capsicum
Ginger Garlic (crushed)
Red chilli powder
Soy sauce
Tomato chilli saucereen chilli sauce
Ajeenomotto
Vinegar
Corn flour
Salt
Oil

Preparation:
  1. Soak some wooden skewers in water 
  2. Add all the ingredients in the marinade section to the chicken and marinate for atleast 1 hr
  3. Before skewering the chicken pieces sprinkle some corn flour on the marinated chicken and skewer the pieces
  4. Grill the chicken in either charcoal grill or electric grill(i used electric grill)


Making the sauce:
  1. Add some oil in a pan
  2. Add the chopped ginger and garlic and saute well
  3. Add the onions and capsicum and add salt, ajeenomotto and chilli powder
  4. Add all the sauces and vinegar and add water and mix well
  5. Mix some corn flour in water and pour to the mixture to thicken the sauce
  6. Adding color is optional
Make the sauce first and then grill the chicken. After grilling brush some sauce over the chicken both the sides. While serving keep some extra sauce on the side.

Note: Cut the chicken into strips rather than cutting it into cubes. It looks good on the skewer

VEG.SPRING ROLLS

Ingredients:
Spring rolls pastry sheets
Onion
Carrot(shredded)
Capsicum(sliced)
Cabbage(shredded)
Ginger garlic paste(little)
Maggie  taste maker(one packet)
Spring Onion
MSG salt
Soy sauce
Chilli sauce

Preparation:
  1. Heat some oil in a pan and add ginger garlic paste. Add onions and saute well
  2. Add all the veggies and saute well
  3. Add some salt and MSG salt and mix well
  4. Add the maggie taste maker  and little soy sauce and chilli sauce and mix well
  5. Add the spring onions atlast and mix well
  6. Cool the mixture and keep it in the pastry sheets and roll it and deep fry it in the oil
Eggs can be scrambled seperately and add to the mixture.Shredded chicken can also be added

DUM AALOO

Ingredients:
Baby Potatoes - 1/2 kg
Onion - 1
Tomatoes - 2
Ginger garlic paste - 2 tsp
Turmeric Powder - a pinch
Red chilli powder - acc to taste
Cumin powder - 1/2tsp
Coriander powder - 1tsp
Kasuri methi(Dried fenugreek leaves)
Whole garam masala
Cumin seeds
Cream - optional
Butter
Oil

Preparation:

  1. Deep fry the uncooked potatoes in the oil without cutting it
  2. Heat oil in a pan and add Cinnamon, cardamom and cloves and half a tsp of cumin seeds
  3. Then add one big chopped onion and saute it
  4. Add a pinch of turmeric and then add 2 tsp of ginger garlic paste and fry well
  5. Add a little water to prevent the masala from sticking and add red chilli powder(acc to ur taste) and 1/2 tsp cumin powder and 1 tsp coriander powder and cook well till the oil seperates
  6. Add 2 medium size tomatoes and cook until the tomatoes are soft and well cooked
  7. Cool this mixture and remove the cinnamon cardamom and cloves from the mixture and grind it to a smooth paste
  8. Add a little butter in a pan and when it is heated pour the ground mixture in it and add needed amount of water to make it thin
  9. Allow it to boil and add salt and a pinch of sugar and add the fried potatoes in it and cook for 5 mins                                                                                                                                                 (If u dont want to fry the potatoes just add the uncooked potatoes and cook for longer time)
  10. Atlast add a tbsp of cream (if u dont have cream add 2 tbsp of thick milk)
       Garnish with little coriander leaves
